The entrepreneurship is a hot topic in Colombia. Pymes represent a high percentage of job creation in the country and a significant share of the Gross Domestic Product. Therefore, creating and businesses is the issue addressed in this paper, from the figure of hiposódico restaurant, that is to say, specialized foods low salt, aimed at a specific market, made up of people who care about their health and who already show symptoms of cardiovascular disease, attributed to the high consumption of sodium. The author designed a project for the creation of a low-sodium food restaurant, located in the municipality of Arauca, where there is this kind of business but there is a significantly large untapped market potential. descriptive methodology was applied and followed the guidelines established administratively for these businesses, achieving a concrete result, ready to be applied to reality, with reforms that will obviously be in the process of implementing the project.
