Resumen
During the recent years, in many parts of the world, the way to establish right conditions based on animal welfare has been sought to improve the conditions where animals destined for human consumption are reared, transported and maintained in the beneficiation plants. The main objective of this research was the designing a reception protocol for pigs based on PORCICARNES infrastructure which is a integral benefit plant based on regulations in force. At first through observation in order to establish indicators that would allow us to do an analysis of the structural conditions of the reception dock, the corrals, the utensils and the animal management welfare by the operating personnel. An statistical inference analysis was applied on the data obtained in the selection of a population simple random sample from the information contained in records provided by the company and others implemented for the data complementation, with that data estimation was made in the parameters from which statistical indices for the development of the work were extracted, where evidence was found, as to the conditions of the infrastructure and some shortcomings in the personnel competences that affects in a negative way in ante-mortem animal stage, and by this way was proposed a protocol that would identify the possible causes of pig injuries and thus mitigate this problem, also were obtained observation items that compromised a significant percentage of pigs slaughtered per month, with vocalizations as the most observed item in the compliance record. Also was observed a very high improvement in the reception corrals during November, the lesions registry shows that the lesion with greater incidence was the dark leg. This study was able to conclude that the pigs reception protocol provides a significant improvement to animal welfare at the time of the unloading and the stay of the animals in the reception pens allowing the stress reduction in animals and allow to approach to mandatory compliance levels required by Colombian legislation in terms of animal welfare and be able to provide the final consumer with high quality products.
