The following document is the final report of the social, business and solidarity practice carried out at Vijagual S.A cold storage plant. Whose overall objective was to "Design a Procedures Manual for the bovine carcass classification in VIJAGUAL S.A cold storage plant on the basis stipulated by the Institute of food science and technology of ICTA". The methodology followed for the fulfillment of this goal began with a literature review related to the bovine carcass classification, followed this, assessment of the requirements that stipulates the carcass and bovine cuts classification system ICTA. at the same time was the identification and description of the process of Vijagual S.A, then developed the format of classification from channels with quality factors stipulated by the ICTA system for the collection of information, later, the identification of areas of the process for measurement of these quality factors was made and began the Sampling Process, in which analyzed 450 carcass in total, which were selected randomly among the lots that were sacrificed to the length of professional practice. The results showed that 64.4% of the carcass studied were males and 35.5% were female, 69.3% were young animals 9.7% (44) classified as old. With respect to the degree of completion, the majority of carcass were placed between the degree 0 and 2, there was no grade 3 carcass. Concerning the degree of shaping the 50.4% presented a good grade, 39.7% grade excellent and 9.7% grade regular, not presented lower degree. The results of the final classification of the carcass showed that category 3 star obtained in greater number of carcass classified in this range with a 32.4% of the total, followed by the category 4 stars with a 30% of the total, then category 5 with 20.4% (92) of the total, category 2 star with a 12.2% and finally the category 1 star with 4.8%. As are final result, the Manual of procedures was drafted. Finally concluded that evaluation systems of carcass around the world differ according to the particularities of each country, for the Colombian case the most important quality factors to make the classification process are the sex, weight and age.
