Currently, it seeks to establish systems that allow consolidating the application of the principles of animal welfare, in all links, both production, marketing and subsequent benefit. Therefore, it was proposed to develop and apply a manual that integrates and establishes all the procedures carried out during the livestock fairs at Mercagan S.A. in order to standardize each step under the guidelines of animal welfare and the regulations required by the health authorities. The holding of livestock fairs and auctions make it possible to supply the local meat markets of the animals sent for benefit. However, in these events there are several factors that affect animal welfare and the quality and safety of the meat. To address this issue, the inconsistencies and irregularities obtained when applying surveys and checklists on the procedures carried out during livestock fairs are described, in order to correct and establish them based on the literature reported for animal welfare and the requirements demanded by the authorities. Once the manual was completed, it was applied to the development of the fairs and the results obtained were subsequently measured and recorded. The inspections carried out during the reception of the animals by the operators obtained significant improvements after having applied the procedures manual; in the same way, some events were corrected to provide a management focused on animal welfare.
