Resumen
The purpose of this work was to develop a business plan for a rabbit meat production chain, so that the product would be more affordable and contribute to the food security of the municipality of Bucaramanga, Santander. After carrying out an analysis of the problems around food security, emphasizing the influence that people's economic situation has on it, we proceed to review various research works in the framework of food security and livestock production, finding that these works tend to focus on factors such as health, the amount of meat produced, among others, without addressing strategies aimed at reducing the sale price of the product. On the other hand, a brief analysis of the potential market for rabbit meat was made at a global, national and local level, which revealed a promising panorama on which to work in the future. The organization and structure of the production system were established according to theoretical bases regarding the rabbit and its breeding for human consumption, in addition to what is related to other processes carried out within it. Finally, with the financial analysis of the project, it was concluded that this project, developed under the established conditions, is not viable and does not meet the proposed objective, so it is recommended to carry out studies that allow establishing alternatives for the production of rabbit meat, in order to reduce the cost of production and make it more affordable.
