Poultry farming at a global level is one of the most widespread and carried out livestock operations due to its high profitability and the precocity to obtain results, this industry is the largest producer of protein of animal origin, within this entire productive chain the industrialization process of the birds in food is a critical point due to the constant and frequent problems that occur in the processing plants. These problems on many occasions are due to inadequate desensitization processes that damage the carcasses, generating economic losses and indirectly affecting the animal welfare of the birds, since the inadequate slaughter process generates suffering and pain in the animals in the desensitization process which should be as less traumatic as possible. This is why the standardization of beneficiation processes through stunning in an electric bath is essential, this method is the most used worldwide due to the ease of applying it, this system has some problems, among which it stands out that it does not a frequency, amperage and voltage standard is used to guarantee the desensitization of the animals. In accordance with the above, El Manantial RF S.A.S processing plant intends to standardize these items according to the animals that will be slaughtered to guarantee their correct slaughter. As the main result, it was evidenced that at frequencies, amperage and voltage of 400-410 Hz, 22v, 290-300mA, for males and 411-420Hz, 27-28v, 310-320mA, for females it was guaranteed that the desensitization process is adequate, greatly reducing the presence of reflections in these. In conclusion, it was evidenced that the standardization of these variables guarantees optimal desensitization processes for both males and females, reducing carcass lesions and improving animal welfare indices.
