The companies have found a series of injuries that affect the quality of the final product, and that do not allow its passage to the next phase of the process, that is, that it will not reach the final consumer, since the quality failures that some pieces of the animal present , especially in relation to hams and wings, suffer such a degree of damage that they result in seizures or a reduction in quality. From the point of view of losses and losses in productivity, it is a relevant piece of information to pay attention to and propose its improvement. A previous characterization of what is found in the plant can lead to a better perception of this matter, and establish the color margins in which the acceptance, rejection, confiscation and quality reduction is carried out, serves as a diagnosis for improve some critical points of production, and also to fully characterize the colors and different grades found within them.
