Supply chains in the world of production are characterized by reducing product development periods, having a faster response to the market. In this degree work, a study of the supply chain is made, especially in the production link of the salt seasoned bread of the Alexpecial bakery, in the city of Neiva, which is dedicated to the production, distribution and commercialization of the bakery products throughout the city. For the modeling of the chain, information provided by its owner and employees and a field study carried out by us were used. With the information obtained, a model of the production of salt seasoned bread is made, where ProModel was used as a simulation tool. The links in the company's supply chain begin with the acquisition of raw materials and ends with the commercialization of finished products until they are in the hands of the customers. The production process is as follows: sourcing of raw materials, setting them up, kneading, molding and cutting, scrapers, leavening growth, baking, cooling, packaging, finished product warehouse, distribution, stores and the final consumer. . The model involves the variables: demands, orders, units produced, capacity, shipments and sales. Finally, different scenarios are analyzed, looking for parameters that allow a better understanding of the supply chain; The results obtained are studied and the respective conclusions are presented.
