Worldwide, the pathological alterations of red viscera that affect the quality and safety of the carcass in bovines are one of the main causes of decomposition and consequently important economic losses in the processing plants. For this reason, this literature review seeks to establish the pathological alterations related to quality and safety in red viscera, this was done through a selection of information from various databases, which were classified by inclusion and exclusion criteria. After analyzing the information collected, 50 articles were selected, within which the different diseases to be treated were divided into the following organs: Liver, lung, canal, heart, kidney. It is established that the organs with the highest incidence of injuries are the liver, lung and heart. According to the literature, it is reported that the most affected organ in the production of meat products is the liver with 34%, followed by the lung with 28%, the complete canal with 20%, the heart with 16% and finally the kidney which only 2%. In addition to this, the final disposition of the canal is established in case of presenting any disease, pathological state or anomalies and special situations.
