The cyanosis is one of the conditions with the highest incidence in seizures in the poultry processing plant, visually evaluate the color characteristics and relate it to the possible risk factors, which leads to its increase and identify the quality control points to select which ones. They are suitable for consumption, and alert in advance, which farms represent an increase in cases and a database to exercise some kind of surveillance. The main objective is to provide a practical protocol, through visual observation of the color of the breast muscle (pectoralis mayoris) which is related to the pH and type of meat, it also allows us to have a guide to compare the visual differences in the optimal color of and relate it to the possible factors to reverse or exercise some control measure. In the following protocol the operator will also be able to find color comparison charts of normal breast and cyanotic breast, pH scales and those related to this state. Intensity level, together with the different colorations that characterize and categorize it as dark, firm or dry meat (DFD). You can also find its relationship to other basics with comorbidities or pre-existing conditions. Another objective of this document is to provide specific guidelines to follow in order to improve the selection and identification of birds with the presence of cyanosis. Which will ultimately lead to an improvement in product quality standards. The classification provided in this file was achieved by identifying the carcasses only by the external visual appearance of the breast, excluding any other anomaly or concomitant pathology.
