The following document corresponds to the final report of the social, business and solidarity internship carried out at "Planta de Desposte Río Frío S.A." Whose overall objective was to determine the shelf life of chilled and frozen bovine brisket and rib cuts, vacuum packed and in bulk. Sampling was performed in 32 random cuts of brisket and rib cuts that were processed during the period of study in DRF. As soon as the samples were finished taking, microbiological, organoleptic and physicochemical examinations that influence the product's shelf life began to be carried out. During the analysis period, a total of 26,812 animals were sacrificed, of which 2,329 canals were deboning, 32 of these deboning animals were evaluated in brisket and rib sections. According to what was found, it was determined that the useful life of the vacuum brisket and bulk brisket cuts had a shelf life of 45 and 8 days respectively and for the vacuum and bulk rib cuts, it was obtained a useful life of 40 and 7 days, respectively, this demonstrating that the deboning plant complies with the international standards of shelf life of refrigerated products and with the results of this internships there are bases for future research, all microbiological, physicochemical and organoleptic evaluations were performed by the Inoqualab laboratory ®. In conclusion, it was observed that the deboning plant has processes that guarantee shell life of the processed meat cuts and that in addition to this there is total confidence for the consumer in so much as during the examination it were not found potentially dangerous microorganisms for the the consumers health, thus consolidating " Planta de desposte Río Frío" as one of the best in the region with a bright view to future exports.
