among the main factors that currently affect the behavior of the Colombian meat sector is the low productivity at the farm level (low weight gains and high slaughter ages), the low volume of meat produced, the existence of deficiencies in the traceability system and a not very important increase in the national consumption of meat. On the other hand, the accelerated growth of the population and the international demands of the meat market, demand that Colombia study both production alternatives and evaluate the quality of meat produced. Therefore, this work aims to summarize the current veterinary literature in order to descriptively contextualize the quality of the country's bovine carcass. The proposed methodology consisted of a systematic literature review based on research articles under the PRISMA methodology. The results were organized into 2 components, the first considers the data obtained during the development of the 5 phases that make up the design framework of this study Figure 6, and the second group and summarizes the representative studies that report on the quality of the channel In colombia. The quality of beef in Colombia, mainly produced in the low tropic of Colombia, is associated with multiple and diverse technological patterns of each region. The technologies applied in an integral way in the livestock companies, are related to the size and structure of the herds, the forage resources, the feeding systems, the animal genetic resource, the marketing system, the type of organization and the management of the livestock company.
