In the present document was designed the process of a gastronomy company called Restaurante El Bosque Picadas Parrilladas, that was carried out under a process management approach, which allows identify each process by a map where it is classified according to its type: managerial, operative, support and, measurement, analysis and improvement. It presents a documentation of the survey, identification and standardization of the most critical processes that in this case was identified by means of a diagnosis and only took into account the support and customer service, by means of formats for collection and characterization from each of them.In addition, indicators are used to evaluate and control processes, generating efficiency, effectiveness and productivity under quality guidelines as well as the functions manual.
